10-Minute Shrimp and Mushroom Thai Curry


The amount of curry paste you use is totally up to you. I've used 2 tablespoons, which is about medium spice level. You can always add more curry paste after tasting, so it's best to start with a little bit and work your way up. If you're cooking rice, make extra and freeze for next time.

Green Mango Salad


It's best to eat this salad up within 24 hours. Makes a great appetizer as well as a side dish! If you wish to serve it as a dinner salad, add some cooked shrimp, sliced cooked chicken, or fried tofu.

Thai Lemon Shrimp



This Thai shrimp recipe features both lemon and lime flavors for the ultimate shrimp dish. And unlike most shrimp recipes, it doesn't contain a lot of cream or butter. Coconut milk is used instead, which means this dish is lighter, but still rich in flavor. Lemongrass adds to the lemony taste, while lime leaf and lime zest contribute an extra bit of zing. Makes a nice dish to serve company or anyone who loves seafood. Serve with plain or saffron rice, and enjoy!
